sweet potato fries

some of the vegetable stands and farms still have some local sweet potatoes from their fall harvest.  while on a sunday country cruise, we picked some up and decided to make some sweet potato fries.  most of the time the fries are fried but we opted for an easier and healthier version.

ingredients

-sweet potatoes

Anchorman: The Legend of Ron Burgundy buy

-olive oil

-salt and red pepper flakes

directions

-heat the oven to 450

-peel the sweet potatoes

-cut the sweet potatoes into french fry shapes

-put the cut sweet potatoes into a pan filled with cold water

-turn on the burner and cook on high for about 10 minutes

-drain the sweet potatoes and toss with olive oil

-put some parchment paper on a cookie sheet

-place the fries on the sheet and put in the oven

-keep an eye on the fries, the cooking time varies from around 20-30 minutes

-about half way you can flip the fries

-sprinkle salt and red pepper flakes to taste
