at the studio, we love it when rebecca’s dad, “t-birdie” comes to town. he has a big personality and heart and is one of the best story tellers that i have ever heard. every visit is a treat and he is always sure to leave us with a clever limerick.
i asked t-birdie to share his pimento cheese recipe with us today, it is said to be the best! this spread is a southern staple at any social gathering is sure to be a crowd pleaser.
ingredients
1 lb sharp aged cheddar cheese (cabot cheese is recommended)
1 4 oz jar of pimentos and their juice
2-3 Tbsp mayo
2 Tbsp relish
4-5 drops of tabasco
*****additional add ins: green olives or pecans
directions
shred the cheddar cheese
mix all of the ingredients together
serve with white bread, mixed veggies, or use it as a topping on your favorite sandwich or burger
**t-birdie recommended that you make a day ahead and let the flavors marinate
and appropriately leaving you with a limerick……
A cheese that was aged and gray
Was walking and talking one day.

My mama was a goat -
And I’m made out of curds, by the whey.
