yesterday one of the r.wood artists had a potluck, which happen quite frequently in the spring. i guess we take advantage of the nice and mellow weather before the heat sets in. i always like to make something that features the season’s bounty. our garden at r.wood doesn’t have too much going on since we have just done most of the planting, so i decided to showcase my at home herb garden by making an herbed potato salad. it was a perfect light and fresh salad for the beautiful day.

ingredients Man’s Best Friend on dvd
-about 3 lb peeled potatoes ( i threw in a couple sweet potatoes that i had on hand)
-4 cloves of garlic
Sydney aka Hard Eight full -1/4 cup olive oil
-1/4 cup vinegar (i used red wine)
-1/4 diced fresh herbs: basil, chives, sage, oregano, mint, rosemary, parsley, thyme, dill
-1 Tbsp sweetener: honey, sugar, agave nectar…etc
-salt and pepper to taste

-dice and cook the potatoes
-run cold water over potatoes to cool
-make the vinaigrette by mixing all of the ingredients together
-toss the potatoes with the vinaigrette and cover in refrigerator until ready to serve
