fried green tomatoes

this year our garden is stocked with dozens of tomato plants.  with the plants weighted with big green tomatoes, i decided to cook up one of my favorite southern foods….fried green tomatoes!  this simple recipe is a great way to enjoy the fruits of the tomato plant before they ripen.  serve them with your favorite dipping sauce or make a sandwich….try a BLT or a pimento cheese and fried green tomato sandwich.

ingredients

-green tomatoes

-a pint of buttermilk

-equal parts of all purpose flour and cornmeal

-salt

-olive oil

directions

-slice the tomatoes, about 1/4 inch is fine

-salt the tomatoes and place on a paper towel or a wire rack

-let tomatoes sit and sweat for about 20 minutes or longer

-pat dry with a paper towel

-pour about 1/4- 1/2 cup of oil into a cast iron pan.. you may need to add more as you fry more or clean out the old oil and start fresh again

-turn the heat on to medium high to heat up the oil

-in one bowl, pour your buttermilk

-in another bowl, mix your AP flour and cornmeal together

when the oil is ready…  prepare yourself to fry

-dip a tomato slice in the buttermilk, then the flour mixture

-with tongs, gently place the tomato in the hot cast iron pan

-repeat until you have about 4-6 tomato slices in your pan (more or less depending on the size of your pan)

-keep an eye on them and flip when brown

-when tomatoes are done place on a wire rack or on a plate covered in paper towels

-salt to taste

ready to serve!
