the other day, i had lunch over at my friend nancy’s house and she prepared some of her tamari pecans. i couldn’t resist asking her to share her recipe. they make a simple and healthy snack.
The only time I use measurements and quantities is for baking. Otherwise, I navigate by feel, sight and smell.
The nuts are super easy. You need three ingredients: TOASTED sesame oil, tamari, and pecan halves.
Coat the bottom of a cast iron (or other heavy-bottomed) skillet with the sesame oil. Heat the oil over a medium flame, and add about 12 oz. pecan halves to the oil. As soon as the nuts start turning golden, begin stirring with a wooden spoon. Keep tossing the pecans until they are nicely golden, not burnt. Turn off the heat, and splash tamari over the nuts. The tamari will sputter and sizzle: keep stirring until the liquid is absorbed. Let the nuts rest for a few minutes. Taste to check for salt level. You can repeat the splash-and-stir step if you want the pecans to be “richer” tasting and saltier.
