wild onion quiche

yesterday could not have been any more perfect;  good company, pleasant temps, and not a cloud in the sky.  we went out for a big hike with rebecca and mr. green jeans on their land.  they had a forest full of wild onions i harvested a few handfuls.   all of the way home i contemplated what to make with them.

we decided to saute the onions and make a quiche.  it was simple and fulfilling after a day full of sun and hiking.

recipe follows

ingredients

pie crust (homemade or from your grocer’s freezer)

4  eggs

1 1/4 cup whole milk

1/2 tsp salt

pepper

1 cup cheese of your choice (i used an italian blend that i had on hand)

2 Tbsp unsalted butter

a large handful of wild onions (you could use spring onions or chives)

1 cup chopped greens (i used chard and beet greens from the garden)

directions

-pre-heat oven to 375 degrees

-pre-bake the pie crust for 10 minutes

-meanwhile, saute the greens in 1 Tbsp butter, add a dash of salt

-separately saute the wild onions in 1 Tbsp butter, add a dash of salt

-in the bottom of the pie crust add 1 cup of cheese

-add greens and then the onions

-pour the egg mixture into the pie crust

-bake for 40 minutes or until you can poke a knife into middle and it comes out clean

goes great with a fresh spring salad and some roasted potatoes

    My yard is filled with wild onions. For some reason I have never cooked with them. I love onion quiche. This is fantastic.
