potatoes with wild onions and herbs

i went to a potluck the other night and had some really lovely potatoes.  they were simple and flavorful, just the way i love my food.  they inspired me to use up some wild onions growing in the field across from my house and some herbs growing in my garden.

i served these up alongside a fried egg and spring salad.

recipe follows

to make the potatoes….

boil them until al dente

in a frying pan saute the onions in some butter or olive oil

add the potatoes  and cook for a few minutes so they absorb the flavors of the onions

add salt and pepper and sprinkle with some fresh herbs (i used dill and fennel)

remove from heat and enjoy!
