winter kale soup

as i am reminded every year around this time, the weather just can’ t make up it’s mind.  it’s hot for a couple of days and the next they are forecasting wintry mix.  and then there is  the pollen, every year they say it is off of the charts.  it is just early spring peeking it’s head around the corner.

while i love the warm days, the inconsistancy always seems to give me a head cold.  last week i got hit with a bad cold and flu.  not so fun.  we ended up making and consuming a lot of soups.  there is nothing more comforting than a good soup loaded with lots of vegetables.

ingredients, mostly anything can be adapted to what you have on hand or what is in season

1 yellow onion

1 Tbsp olive oil

1 green pepper

3 carrots, peeled and diced

4 cloves of garlic

1 large bunch of kale, chopped

3/4 cup dried or fresh black eyed peas

3 cups stock, or whater

water

salt and pepper

directions

-dice the onion and green pepper and saute in olive oil until translucent

-add the carrots and chopped garlic and saute for another couple of minutes

-add the rest of the ingredients and simmer for a couple of hours

-enjoy!  serve along side a piece of rustic bread!
