there is so much that i love about fall.
the colors....the fall vegetables...the weather...i love it all!
yesterday i made a great fall salad, filled with early fall veggies.
enjoy!
ingredients
2 medium butternut squash
1 large sweet potato or two small
1 can of chickpeas or about 1/2 cup dry
1 red onion
4 cloves of garlic
2 Tbsp olive oil
a handful of baby kale, thinly sliced
1.5 cups of quinoa (a grain that is found at your local health store...an possibly supermarkets)
1 cup georgia pecans
salt and pepper
directions
pre-heat the oven to 375 degrees
-cube the squash and sweet potatoes and toss with olive oil and place in a roasting pan.
-roast in the oven for about 30 minutes.
-cook the quinoa
-chop the garlic and onion
-roughly chop the pecans and toast them until fragrant
-add the potatoes, squash, chopped onion, garlic, chickpeas, and baby kale to quinoa. stir in the pecans and salt and pepper to taste
