people have different theories of how to tell who has the best bar-b-q. some people say the more calendars on the wall, the better the bar-b-q. i say, the more low key the place is, the better. this place doesn’t even have a name. it’s attached on the side of an old gas station at a lonely exit off 1-20 near madison. there’s hardly a sign of commerce there. there’s not even a picnic table to sit at, but they have the best ribs i ever ate. the meat just falls off the bone, and the sauce is not spicy, but savory. just step up to the window to order. i got a ‘rib sandwich’, which means some ribs with a couple pieces of white bread. good eatin’!
