We are starting to see cooler days and nights here and we have been making lots of soups and pies. I got a beautiful Nappa Cabbage in our CSA box this week and made a simple cabbage pie last night.
Pre-heat oven to 350 degrees
ingredients
1 pie crust
1 tbsp butter 1 large onion, sliced
1 nappa cabbage, sliced
salt and pepper, to taste
6 oz of mozzarella cheese
2 eggs beaten
directions
-saute the onion on medium/low heat for about 5 minutes
-reserve 1/4 of the onion for topping
-add the sliced nappa cabbage
-cool mixture for 5 minutes and drain any liquid
-sprinkle some cheese at the bottom of the pie
-add a layer of the cabbage mixture
-repeat
-pour the beaten egg mixture over the pie
-arrange the reserved onion slices on top
-put the pie in the onion for 40-50 minutes
