when i think of a perfect southern dessert, bread pudding is at the top of my list. served along some ice cream that melts over the warm pudding.....is there anything more comforting than that?
ingredients
1 loaf of crusty french bread, diced
1 1/2 cup sweet potato puree
3 farm fresh eggs
1 teaspoon vanilla
2 cups whole milk
1/2 cup maple syrup
1 1/2 teaspoon pumpkin pie seasoning (i added a little more cinnamon)
3/4 cup butter, browned
directions
-pre-heat oven to 350 degrees
-mix sweet potato puree, eggs, vanilla, whole milk, syrup, and pumpkin pie seasoning together
-toss the bread with the brown butter in a casserole pan or 9 x 13 pan works great too -pour the sweet potato mixture over the bread
-bake in the oven for 25-30 minutes or until the top is a little browned and custard is set
