whew....we are still spinning from the busy holidays but have still found some time to relax. we hope everyone's holidays were wonderful and filled with yummy food and some special moments. today's recipe is one that my husband recalls from growing up. it has become a tradition around our house to make this on christmas morning... it is so good, my daughter would prefer it to be an every morning tradition. when this is baking in the oven, it is a fun one for kids to watch, you never know what it will do!
ingredients
2 Tbsp butter
1/2 cup flour
1/2 cup whole milk
2 eggs, beaten
1 Tbsp sugar
1/4 tsp salt
directions
-pre-heat oven to 425 degrees
-put cast iron pan in oven with butter inside to melt
-when butter is melted, remove from oven and move around to coat pan
-mix the flour, milk, eggs, sugar, and salt together
-when oven is ready, pour pancake batter into cast iron pan and put directly into oven
-bake for 15-20 minutes, or until browned
-enjoy family style with maple syrup or honey.
