we had some snow days last week and did some major baking and cooking while we all stayed cozy at home. i am a big fan of chocolate chip cookies and could bake them (and eat them) in my sleep. i am always trying new things to switch them up a bit. with our rosemary bush in full bloom, i took it as a hint to try and add them to these cookies. i love using rosemary in sweets, so i gave it a go. my non-chocolate chip loving husband even loved them. remember that rosemary is a strong flavor so a little bit goes a long way!
ingredients
2 sticks of unsalted butter
1 egg
4 sprigs of rosemary
1 teaspoon vanilla
1 cup brown sugar
1/2 cup granulated sugar
1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon finely chopped rosemary
1/2 cup chopped pecans
1/2 cup dark chocolate chips
directions
-melt butter along with 4 sprigs of rosemary
-let the butter cool, and remove the rosemary
-in a mixing bowl add, butter, egg, sugars, and vanilla
-using an electric mixer, cream ingredients
-in a different bowl mix the flours, salt, and baking powder
-slowly mix into the mixed wet ingredients
-by hand mix in the finely chopped rosemary, pecans, and dark chocolate chips
-if you can wait and let the dough rest overnight, the flavors will really come out...but is optional
-pre-heat the oven to 350 degrees
-line two cookie sheets with parchment paper
-drop spoonfulls of cookie dough onto sheets and bake for 11 minutes
-enjoy with a cold class of milk or hot cocoa!
