the markets in france were overflowing with vegetables and fruits. many of them were full of things we have here in athens, but one thing i kept seeing which we definitely don't have around here is this wild asparagus (asperge sauvage). it was so beautiful and delicious! the taste is very similar to regular asparagus. one night we steamed the asparagus and some fresh peas, then added them to some lardons in an oiled skillet. we tossed all of this with some cooked bucatini pasta, and shaved parmesan on top. it was delicious! and, obviously, could easily be vegetarian if you left out the lardons, and you could also substitute regular asparagus...i am sure it would be equally as good.
