my husband likes to head to the north georgia mountains and go fishing. sometimes he brings back quite a bit of fish and one of our favorite ways to prepare it is to smoke it. here is our favorite brine which is great to marinade in prior to smoking (or any way you want to prepare it).
ingredients:
about 4 pounds trout
4 cups water
1 cup soy sauce or tamari
3/4 cup maple syrup
3 cloves chopped garlic
1 Tbsp chopped fresh ginger
directions
-mix all ingredients together
-let the fish marinade for 3-4 hours or overnight
-prepare fish to your preference
