it's this time of year that gardeners and farmers are flooded with basil, tomatoes, and corn. it's a challenge to eat them all up but we are tryin'. the other day i made this salad with our garden's bounty and wanted to share.
ingredients
1 cup dried israeli couscous (prepared to your packages instruction)
1 pint of summer tomatoes or two large tomatoes
1 cup loosely packed basil
2 ears of corn, cooked
1/2 cup crumbled feta
dressing
juice of 2 lemons
1/4 cup olive oil
2 cloves garlic
salt and pepper
directions
-chill prepared couscous
-slice the tomatoes in half
-tear or cut the basil into small pieces
-cut the cooked corn off of the cob
-mix all of the couscous, tomatoes, corn , and basil
making the dressing
-put all ingredients in a blender or use a hand held immersion blender to mix ingredients
-mix the salad and dressing together before serving
