it's that time of year where folks are up to their ears in fresh tomatoes. i have had my filling of tomato filled meals and have dozens on the vine waiting to be picked. this weekend i put some up in the freezer to be used for winter soups and sauces.
putting up tomatoes doesn't have to take all day. here is my super simple way to enjoy my freshly grown tomatoes all year 'round.
-in a large stock pan, boil some water
-wash the dirt off your tomatoes
-blanch your tomatoes in the water until the skins split
-put a collander over a large bowl, to catch the tomato juices
-carefully remove the tomatoes from the boiling water and set to cool in collander
-when cooled, peel skins off and take out the core of the tomato
-place in a freezer bag or other freezer container
-place in freezer for future use
