we got some fresh black eyed peas from a local farm. i cooked them up and made a batch of hummus with them. a good southern, protein packed snack!
ingredients
1 1/2 cup cooked black eyed peas
2 cloves of garlic
1/4 cup tahini
3 Tbsp or more extra virgin olive oil
juice of one lemon
salt to taste
directions
-in an immersion blender or food processor add all of your ingredients
-blend until combined and has a creamy texture
-cool in fridge until ready to eat
