Morel & Leek Frittata
This year's weather has been perfect for Morel Foraging. My husband came home the other day with a large bag full of the largest Morels I have ever seen! I guess you can say we have had some yummy meals lately.
Ingredients
Extra Virgin Olive Oil
1 pound of cleaned Morel Mushrooms
3 leeks
3 cloves of garlic
8 eggs
1/2 cup whole milk
Salt and Pepper to taste
chopped fresh parsley
Directions
-pre-heat oven to 350 degrees
-sauce the mushrooms, leeks and garlic until cooked (season to taste)
-meanwhile beat the eggs and milk together
-pour egg mixture over mushroom mixture and cook on low to medium heat for 3 minutes, do not stir
-top with salt and pepper and fresh parsley
-place in oven for about 10-12 minutes until frittata is cooked
-serve alongside a nice spring salad

Homestead Remains
I love to drive out in the country..... pastures, trees and sky, and old falling down places are what do it for me. Sometimes you may just catch a glimpse of some old place out of the corner of your eye as you speed down a country road. Usually, the remains are half hidden beneath vines and trees overgrowing it, and you wonder if it's worth it to turn around and go back. I stopped for this one, and trespassed a little to get a better look. The old house was gone, but the pecan trees and outbuildings remain. An old well, and a tiny cabin.

Old House
Sometimes you'll drive along and find an old house caving in on the side of the road. Why do I love old shacks so much? I think they just spark my curiosity. Who lived there? What did the furniture look like? What did the kitchen look like? Were the people there happy? Unhappy? Did they appreciate the beauty of that slant of light coming through the window? You look for emotional or visual clues among the remains, but only silence speaks. I love the mystery.

Pasta with morels and field peas
When the dogwoods start to bloom it marks morel season. The other day we went out and foraged a bag full of Morels. Nothing brings in spring like lovely blooms and freshly found mushrooms.
We made a nice spring pasta with the morels and some field peas.
ingredients
pasta field peas
leeks or spring onions
morels
extra virgin olive oil
salt and pepper to taste
directions
-saute the vegetables
-add to cooked pasta
-add a shaved parmesan cheese
A simple meal indeed!!
